Banana bread

Today we managed to acquire lots of free bananas cos the shop was giving them away. Marv. Just like we used to do in the Haelan – brings back memories (good? bad? ugly? All of the above). I suspect there was a lot of banana bread being made today – but here is my version of the recipe that Corey’s mum gave me. It’s amazing.

2 tbsp butter or marg

1 1/2 cups plain flour (I like rye cos it tastes wholesome-er but that’s just me being a weird vegetable freak)

1/2 cup brown sugar

1 egg

1 tsp baking powder

1 tsp bicarbonate of soda

1 tbsp milk

cinnamon and nutmeg to taste (1/2-1 tsp is usually good enough)

4-5 bananas (as black as they can get)

(extras -hemp seeds are a current face)

  1. Cream butter/marg and sugar
  2. Add egg
  3. Mix in dry ingredients
  4. Add milk and bananas
  5. Bake in a cake tin (preferably about 2 in.) on gas mark 4 – 180 degrees – for 40-45 mins or until the top is crispy but the inside isn’t tooooo gooey when you stab it with a knife

Do it. It’s a buffffting

1 CUP of sugar-that’s way too much sugar! I have a better recipe. Let me know if you want it.
